Stir fried Chicken with Cashew Nuts | Fakeaway Recipe

Chicken cashew is probably up there in terms of popularity as Sweet & Sour Chicken. Very easy to make, just follow our recipe for a perfect Cashew Chicken every time.

Ingredients:
400g diced chicken breast
50g cashew nuts (raw, not salted)
1 tbsp spring onions finely chopped
1 tbsp light soy sauce
Fry light

For the marinade:

2 tsp light soy sauce
2 tsp white rice vinegar

Directions:
Wok Starter Kit
  • Place the diced chicken in a non metallic dish and stir in the light soy sauce and white rice vinegar. Place in fridge to marinade at least 20 minutes
  • Heat a wok with fry light until very hot, then tip in the cashews and stir fry continuously to prevent them burning, about 2 minutes.
  • When the cashew have a nice toasted look, tip in the chicken and continue stir frying to brown and cook the chicken, which should take about 10 minutes.
  • Pour in the tablespoon of soy sauce and continue stir frying until everything is well coated and cooked.
  • Empty into a serving bowl and serve immediately.
