Pan Fried Cod with Giant Couscous

Cod with Giant Couscous

Pan fried Cod is a brilliant lunch idea as it is so easy to do and quick! And, talking of quick, we decided to give this Mediterranean Giant Couscous a try as well, which we saw in ASDA.

Ingredients:

2 pieces Cod fillet
1 pack Mediterranean Giant Couscous
2 tsp Thai Fish Sauce
Fry light
350ml water

Directions:
Giant Couscous
  • Prepare the Giant Couscous as per the packet instructions.
  • When the couscous reaches boiling, heat a frying pan with a little fry light and, when nice and hot, add the cod fillets
  • Cook for about 5 minutes on each side, adding the Thai fish sauce at the end to basically de-glaze the pan
  • Arrange on a plate with a little extra salad (tomatoes and cucumber in our case) and enjoy!
 


Verdict: Very good value and a great alternative to pasta or rice. And straight out of the packet, it works. WIth the Cod, it was perfect as it didn't overpower. That said, for other dishes with stronger flavours, you may want to add a little extra to this. All in all, we would recommend this for your store cupboard staples!
