Speedy Quiche

Nothing is off limits with our eating plans, but some foods are generally avoided, pastry being one of them. But, that doesn't stop us enjoying a nice low fat version of a quiche! Read on for this very quick, nutritious and Speedy Quiche recipe!









Ingredients:

Chopped Red Pepper
Chopped Yellow Pepper
Chopped Onion
Sliced Tomato
4 eggs


200g Fat Free Cottage Cheese
Garlic Fry Light
Salt & Pepper

Method:
  1. Pre-heat oven to Gas 5, 170 electric (fan)
  2. Add 4 eggs and the cottage cheese to a bowl and whisk together using a fork.
  3. Add all the vegetable ingredients except the tomatoes and thoroughly mix to coat them. Season with salt & pepper
  4. Add the tomatoes and just fold lightly
  5. Spray a flan dish with garlic fry light and tip contents in and spread out evenly. It will prevent sticking and add a nice flavour at the same time!
  6. Cook in middle of oven for between 30 and 40 minutes, or until golden on top.
  7. Serve with a choice of salad, or as a hot meal with potatoes and a small vegetable side dish!

You can really experiment with this, try adding lean bacon bits, other vegetables etc., the choice is yours!

And this is suitable for vegetarians!

Our verdict: A very good alternative to traditional quiche without the huge impact usually associated with quiche! Definitely adding this to our meals rota, and certainly going to experiment!
