Chicken Salad with Home Made Coleslaw

This is a simple Chicken Salad with a home made coleslaw to accompany.Salads are a great source of wholesome ingredients, and are ideal for those warm weather months. Anything can be served with a salad, and they are great for using up leftover cold meats.




Ingredients:

Cold Chicken leg (skin removed)
A bag of ready prepared Baby leaf salad
Tomato
Radish
Cucumber
Olives

Coleslaw:

Onion and white cabbage with extra low fat Mayo

Method:
  • Make the coleslaw by finely slicing or grating the cabbage and carrot and then mixing with the mayonnaise. If you wish, you can also use low fat yoghurt or fromage frais instead. For slicing and dicing, we use a Tefal Fresh Express which makes the whole process really easy!
  • Arrange the chicken and salad ingredients on a plate, and enjoy!


We find salads no longer have to be boring! If you don't want to prep your own ingredients, most, if not all, Supermarkets now offer a whole range of ready prepared ingredients at very reasonable prices!
